Greeks celebrate Independence Day by enjoying a traditional meal of fried salted codfish (bakaliaros) with garlic potato purée (skordalia). While it may seem like an unusual choice for the occasion, the dish reflects a blend of religious customs, historical practicality, and cultural tradition.

During Lent, Orthodox Christians typically avoid meat, dairy, and most fish. However, exceptions are made on March 25th and Palm Sunday, allowing fish consumption. Salted cod became popular because fresh fish was often unavailable or too expensive in inland areas. Imported from Northern Europe, it was affordable, easy to preserve, and transportable — making it a staple in Greek households without refrigeration.

Fried cod, with its crispy golden crust, paired with bold, garlicky skordalia, soon became the dish of choice for the holiday. Garlic was believed to symbolize strength and protection, aligning with the day’s theme of resilience and independence.
